So today was actually supposed to be something a little more elaborate, but I got to go to a surprise birthday party for a friend of mine that ended up lasting much longer than I thought it would. I got home, determined to go ahead according to plan anyway and stay up as late as necessary, but a few crucial ingredients to the original recipe had been used up in making dinner while I was away. So, I went for the quickest, easiest recipe I could think of- shortbread- just flour, butter, and sugar! And in this case, about a third cup of quick-cook rolled oats.

From there, I just mixed one cup of flour and 3 tablespoons of sugar, cut in the half cup of butter, and stirred in about a third of a cup of oats.

Then, I shaped it into a circle and crimped the edges, cutting it into 16 pieces.

Lastly, I baked it for about 15 minutes at 325 degrees, leaving me with this:

The final cookie was really good! Again, just slightly sweet (seeing a trend?) and with a really nice, crumbly texture. The oatmeal really brought an average shortbread up a few notches- it felt more put together and added a lot to the flavor and overall texture, too. Done with day three! I’m super excited for a father’s day edition of day four!
