Today’s recipe wasn’t super exciting, but I’m always down to find new, easy ways to make veggies taste special.
This was so simple- I chopped up a head of cauliflower we had in the fridge, mixed together half a cup of breadcrumbs, 2 tablespoons of shredded Parmesan, and some fresh ground black pepper, and stirred an egg and a tablespoon of milk in a small bowl.
Then, I just breaded the cauliflower pieces, dipping them in the wet mixture and then shaking them in the dry breaking. I microwaved a teaspoon of butter to drizzle on top.
I baked the pieces on a greased cookie sheet at 400 degrees for 20 minutes. When done, the pieces were tender and had a nice crunch. The cauliflower was super flavorful! And the prep only took about fifteen minutes, so I think day five went pretty well, despite not being a showstopper.
