Today’s my little sister’s birthday and she put in a special request for coffee cake, so I got up and got cooking this morning!  So I started out  by mixing two and a half cups of flour, a cup and a half of brown sugar, and 1/2 teaspoon of salt. 
Then, I cut in 2/3 cup of butter.   
 Next, I mixed together 2 eggs with 1 and 1/3 cups of milk mixed with 1 and a third tablespoons of lemon juice (substituting for buttermilk).  

I also set aside half a cup of the flour mixture. Then, I combined the wet and dry bowls and stirred. 

Finally, I poured my batter into a 13x9x2 pan and topped with the reserved flour mixture.  

 After 35 minutes at 350 degrees, the cake was done! It was so good- slightly sweet, slightly salty, fluffy, and rich! I think my little sister had a great birthday, too, so I’m calling today a success!
