I’ve got another vegan recipe today, courtesy of more time spent with my best friend. It was a great day. We got beautiful mugs and journals and went swimming to beat the Texas heat. After dinner, we searched for a dessert recipe to make together and decided on a lightly adapted version of the vegan fudge recipe from Oh She Glows. 

To start out, we mixed together 1/2 cup coconut oil and 1/4 cup vanilla almond butter using an electric blender.  

 

Next, we added in 1/2 cup of cocoa powder and mixed. Then, we beat in 1/2 cup maple syrup, just over a tablespoon of vanilla extract, and a pinch of salt. Finally, we added about 3/4 cup of pecans. 

We lined a pan with parchment paper, added the chocolate, and topped with fleur de sel. We froze the fudge for about 2 hours before eating. The fudge was super rich, but a smoother consistency than normal fudge. It also melts pretty quickly if removed from the freezer, but we ate our pieces so quickly that we barely noticed.
