Wow! I can’t believe it’s already been thirty days of cooking for this blog. Today’s recipe’s pretty simple, but so satisfying on a hot summer’s morning. It’s my favorite smoothie recipe so far. I used a whole mango, about a cup of pineapple (5 spears), a cup and a half of strawberries, a cup of frozen berries (blueberries, blackberries, and raspberries), and about 3/4 cup of orange juice. I blended the fruits together and then gradually added handfuls of ice until the mixture was thick and smooth, stirring to check for lumps. To serve, I used large bowls and sprinkled the top with slivered almonds, rolled oats, and coconut chips. The color of the smoothie is so beautiful- it’s a deep purple pink. The taste is great and very tropical.  

Feel free to mix and match toppings to your preference! I really liked these, though.  The mixture of textures was so satisfying. I’m already thinking ahead to the school year and I’m definitely planning on incorporating a lot more smoothies into my life.
