This recipe makes for a great quick lunch! It tastes super fresh and clean and takes only a few minutes to whip up!

You’ll need:

  • a package of pasta
  • an avocado, pitted and sliced
  • 2 cloves of minced garlic
  • salt and pepper to taste
  • the juice of half of a lemon
  • about 2 tablespoons of olive oil
  • 1/4 cup of basil leaves

Make your pasta, following directions on the package. In a food processor, add your avocado, garlic, lemon juice, and basil leaves. Pulse until mostly chopped and combined. Add in your olive oil. You might need slightly less or more than the two tablespoons, but just add slowly and adjust as necessary. To finish, toss with about half of your pasta in a saucepan and heat until warm. Add salt and pepper to taste. Serve garnished with more basil!
