You’ve probably seen this recipe floating around before, but I was intrigued by it the last time it popped up while browsing some cooking blogs and, at my friend’s suggestion, finally decided to try it myself! This recipe is so quick and easy- even better, you probably already have all of the ingredients on hand! It’s great for a last-minute snack or little gift!

All you’ll need is:

  • 1 cup peanut butter (creamy)
  • 1 cup sugar
  • 1 egg

Honestly, this is so easy. Just add the sugar and egg to your peanut butter in a small bowl. Mix very well until the dough is firm and malleable to the touch. Preheat your oven to 350 degrees Fahrenheit. 

 Line a baking sheet with some parchment paper. Make small, 1-inch balls of dough and place them on the sheet about 2 inches apart. Using a fork, go in and make some cross-hatching on the top of your cookies by pressing the tines into the surface horizontally and vertically overlapping. 

 Lastly, pop your cookies into the oven for about 6 to 8 minutes or until firm. Let cool for about 10 minutes and then enjoy!
