I love making a big batch of a quick breakfast item on Sundays to give me an easy morning meal for the rest of the week. This week, I decided on blueberry bread!

You’ll need:

  • 2 eggs
  • 1 cup white sugar
  • 1 cup milk
  • 3 cups flour
  • 3 tbsp canola oil
  • 1 tsp and a half of salt
  • 4 tsp baking powder
  • 1 cup frozen blueberries

This was surprisingly easy!

Start out by beating your eggs and sugar together until creamy and fluffy. Stir in your milk and canola oil until smooth.

In another bowl, combine your flour, salt, and baking powder. Add the wet mixture to your dry goods, working gradually. Last, just stir in your blueberries!

Spread into loaf tins. I used these really neat oven-safe paper ones to make two smaller loafs. Make sure to grease your tins. If you like, sprinkle some coarse sugar on the tops of your dough, too. Bake for about 50 minutes at 350 degrees.


I really enjoyed this bread toasted and spread with a little pat of butter, especially with a cup of tea.
