So, this has been all over the internet for the past few months, but I finally decided to give it a try and I think this lives up to the hype. I really enjoyed knowing that my snack was all natural and vegan, even though it tasted as creamy as real ice cream.

All you’ll need:

  • 3 bananas
  • some soy or almond milk
  • a dash of vanilla extract, if desired

This is so, so easy. Just slice up your bananas into little discs and place in the freezer for a few hours- it took about 3 for me. You want the banana slices to be frosty and frozen through. I don’t recommend freezing an unpeeled banana- it’s almost impossible to get the peel off after if you do.

Then, just place your banana slices in a food processor and pulse until creamy. I added a splash of soy milk to make mine a little creamier and bring everything together, along with a little vanilla extract for more flavor.

That’s it! I topped mine with some fresh raspberries, but this recipe is so versatile! You can add to the ice cream itself, get creative with the toppings, or just enjoy as is. The ice cream is super rich and creamy. This also makes enough for a full meal basically. I made this for just myself for lunch and could only eat about 3/4 of it. Enjoy!
