This makes a super fragrant and delicate soup! I love the combination of flavors with the green onion, bok choy, and ground pork!

Ingredients:

  • 8 cups chicken broth
  • 6 oz chopped bok choy
  • 8 chopped scallions
  • 8 oz ground pork
  • 1 oz chopped spinach leaves
  • 1 clove of minced garlic
  • 1  1/2 tsp soy sauce
  • 3/4 tsp cayenne pepper
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp white pepper
  • salt and black pepper

Start by combining the pork, spinach, 2 of the scallions, and the garlic, along with cayenne pepper, salt, black pepper, soy sauce, and 1/2 tsp of the ground ginger. Form into little meatballs- I was able to make about 20-23 of them. Layer them into a steamer that fits over the stock pot you’ll be using for the broth.

In the stock pot, add the chicken broth, along with the white pepper and the remaining ginger. Place the steamer on top of the pot and bring to a boil for about 10 minutes. Take out the steamer and set aside. Then, add the bok choy and remaining scallion. Cook until just wilted. Add some more salt and pepper, if necessary.

Add meatballs and soup to each bowl and serve.
