So the holidays are officially over. Today was my first day back to school, but it really has been a good break- I got to see family and friends and celebrate both Christmas and my birthday. And with the end of the holiday season, here’s the perfectly sweet and refreshing peppermint bark to close it out.
- 3-5 candy canes, crushed
- a few drops of peppermint oil- 4-5 drops did the trick for me
- 8 oz bittersweet chocolate
- 8 oz white chocolate
First, crush your candy canes. I did this by putting the candy canes in a plastic bag wrapped in a dish towel and using a food hammer to break up the candy.
Next, break all of your chocolate into small 1/2 inch pieces and line a 9×13 inch pan with some tin foil or parchment paper. Set up a double boiler on your stove by boiling a pan of water and placing a heatproof glass or metal bowl over the water. Put about 3/4 of your bittersweet chocolate into the double boiler and stir until melted and smooth. Remove from heat and stir in the remaining bittersweet until melted too. Mix in 2-3 drops of the peppermint oil. Spread evenly in the bottom of your prepared pan. Repeat the process with the white chocolate after about 15 minutes to allow the first layer to set a little bit. Once all chocolate has been spread, sprinkle the crushed candy cane into the still soft white chocolate, pressing the pieces in gently as you go. Then, let set for a few hours in a cool place and you’re good to go!
