So, I have today a recipe for cinnamon sugar popovers! I love popovers- they’re so quick and easy and quasi-magical in their supreme rising powers. The rise of a popover actually comes from the collection of steam inside the dough, stretching out as far as the egg protein allows. They’re so much fun to eat and look super impressive to boot!
- Cooking spray
- 2 eggs, beaten
- 1 cup milk
- 1 tablespoon canola oil
- 1 cup flour
- 1/3 tsp salt
- 2-3 tbsp butter
- 3/4 tsp cinnamon (adjust to taste)
- 1 1/2 sugar
Start by preheating an oven to 400 degrees F and greasing a muffin tin with the cooking spray- this makes six popovers, so you’ll only need to grease 6 cups. Set aside.
Beat together eggs, milk, and oil until combined. Stir in flour and salt until smooth. Then, distribute the batter among your muffin cups, filling about halfway. Bake for 35-40 minutes. Poke a small hole in the bottom of each to let steam out. While the popovers are baking, melt your butter. Stir in the sugar and cinnamon, adjusting to desired levels of sweetness/cinnamon flavor. When the popovers come out of the oven, brush a little bit of the cinnamon sugar spread onto them. I completely coated mine. Yum!
