Spring has finally sprung here in Texas, although this dismal, rainy weather sure diminishes the joy of 70 degree weather. For these grey, drizzly days, I love to pull out a good cup of tea and these honey cookies are the perfect partner.


  • 3/4 cup sugar
  • 1 1/4 cup honey
  • 1 cup shortening
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 tsp baking soda
  • 3 1/2 cups flour
  • 1 3/4 tsp cinnamon
  • 1 tsp ginger
  • sprinkle of salt

Start by melting your shortening and honey together. Stir in the sugar and set aside to cool. In another bowl, combine eggs, vanilla, baking soda, cinnamon, ginger, and salt. Add the honey to your egg mixture and mix together. Gradually add flour to the liquid mixture, one cup at a time. Once fully combined, prep on ungreased cookie sheets and bake for 10 to 15 minutes at 350 degrees.
