Hey guys! So I’ve been kinda MIA for the last little bit, due to a mixture of family vacation to the beach and a leadership camp at a state university. But- I am back and super excited to get a ton of cooking in before school starts up again in 16 days. Today’s recipe isn’t quite a recipe, but it’s a super fun dinner my vegan best friend and I came up with last time I slept over. She’s high-carb, low-fat, so a pasta pizza made the perfect tasty sleepover dinner.
- 1 jar pasta sauce
- 1/2 lb spaghetti
- 4 cups spring mix
- 1 fresh tomato
- Fresh basil
- 1 tablespoon of nutritional yeast
- 2 pizza bases
- 2 cloves chopped garlic
So, we started by boiling some water for our pasta. In the meantime, we preheated the oven to 350 degrees and spread about 1/4 cup each of tomato sauce onto our pizza bases.
Then, we each spread about a cup of spring mix onto our bases, along with a few slices of tomato and the chopped garlic.
Once our water was boiling, we began cooking the pasta and slid our pizzas into the oven. We cooked the pasta to package directions, drained it, and tossed with the remaining tomato sauce, some of our garlic, and a few basil leaves.
Then, we transferred the pasta to our pizzas, splitting it between the two. Finally, we topped with some more tomato and basil and let cook another 3-4 minutes.
After the base was crisped and browned, we took the pizzas out and sprinkled with nutritional yeast. That’s it!
