For those of you who (like me) are holding on to these last days of summer, consider these perfectly sweet-tart lemon bars!


  • 1/2 tsp vanilla extract
  • 2 c flour 
  • 1/2 c sugar
  • 1/8 tsp salt
  • 1 c softened butter

For the filling:

  • 1 1/2 c sugar
  • The juice of 3 lemons
  • 3 tbsp flour 
  • 3 eggs
  • 1 tbsp lemon zest 
  • Powdered sugar to top, if desired

Start by preheating your own to 350 degrees Fahrenheit. Then, in a small bowl, stir in the vanilla, salt, sugar, and flour. Cut in butter until a dough is formed. Press into the base of a lightly buttered deep baking dish. Bake for 15-20 min or until the edges are just slightly browned. 

Meanwhile, stir together the sugar and flour. Then, mix in the eggs. Lastly, add the lemon juice and zest and combine thoroughly. When the base is fully cooked, spread this filling on top and return to oven for 20 minutes or until filling is set. Let chill for 3 hours and then sprinkle with powdered sugar. Yum!!
