This dessert is so so good! It has a strawberry filling and a streusel topping over a shortbread base. Yum! 



  • 1/4 c sugar
  • 1 stick butter
  • 1 1/4 c flour 
  • 1 tsp cornstarch
  • 1/4 tsp salt
  • 1/2 tsp baking powder


  • 2 tsp cornstarch
  • 2 tbsp sugar
  • 1 lb sliced strawberries


  • 1/2 stick butter
  • 1/3 c brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 c flour 

Start by preheating an oven to 375 degrees. Line a round cake pane with foil and grease it. 

In a bowl, cream together the sugar and butter. In a small separate bowl, combine the flour, cornstarch, salt, and baking powder. Beat into the sugar mixture until crumbly. Pour into the bottom of the prepared pan and press into a solid layer. Bake for 15 minutes or until just browned. 

Meanwhile, combine the strawberries, sugar, and cornstarch in a bowl and set aside. 

In another bowl, cream together the butter and brown sugar. Mix in the cinnamon, sugar, and flour until you have a crumbly mixture to sprinkle on top. 

When the base has cooled, spread on the strawberry filling and top with the streusel crumble. Return to the oven for 35 minutes or until the strawberry filling begins to bubble. Let cool before cutting and enjoying!
