These are such a quick and satisfying appetizer to throw together! The creamy richness of the avocado and the crunch of the breadcrumbs make such a great treat. You’ll have trouble sharing them at all.
Now, in a small bowl, combine the flour, 1/2 tbsp garlic powder, 1/2 tsp salt, and 1/2 tsp paprika. In another bowl, crack an egg and lightly mix it.
In a third bowl, combine the panko breadcrumbs, salt, and remaining garlic powder.
For the next step, coat each avocado slice first in flour, then dredge in the egg wash, and finally toss in the breadcrumbs until covered. Lay the wedges on a greased metal baking sheet. Bake in the preheated oven for 15 minutes or until the breadcrumbs are nicely golden.
I like to serve these with a sriracha mayo dipping sauce- that’s about a quarter cup of mayo mixed with a tablespoon of sriracha and a few squeezes of lime juice. Yum!
